A refreshing lemon-flavored coffee cake that is very easy to prepare. This lemon cake bakes up effortlessly into a moist treat.

Serving Size: 8-10 slices

Ingredients:

- 200 g unsalted butter (at room temperature)
- 200 g sugar
- 4 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- Zest of 1 lemon
- 2 tbsp lemon juice
- A pinch of salt

Instructions:

1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. In a mixing bowl, cream the butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In another bowl, combine the flour, baking powder, lemon zest, and salt. Gradually add this dry mixture to the batter, alternating with the lemon juice.
5. Pour the batter into the prepared cake pan.
6. Bake in the oven for about 40-50 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
7. Allow the cake to cool before serving.
