A refreshing and moist lemon cake that is perfect for coffee breaks. Preparation time: 1 hour. Serves: 8.Ingredients:
- 225 g margarine
- 225 g sugar
- 3 eggs
- 1.5 dl milk
- 225 g all-purpose flour
- 2 tsp baking powder
- Juice and zest of 2 lemons
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Beat the margarine and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the milk, lemon juice, and lemon zest.
5. Combine the flour and baking powder, then gradually add to the batter. Mix until smooth.
6. Pour the batter into the prepared pan and smooth the top.
7. Bake in the oven for about 40-45 minutes, or until the cake is golden brown and cooked through. You can check for doneness with a toothpick.
8. Allow the cake to cool before serving.
