This delicious lemon cake topped with pistachios is the perfect dessert to enjoy with coffee. The yogurt sauce adds a refreshing balance to the cake.

Ingredients:

- 200 g butter
- 250 g sugar
- 4 eggs
- 300 g all-purpose flour
- 1 dl milk
- Juice and zest of 2 lemons
- 1 tsp baking powder
- 100 g pistachios (chopped)

Yogurt Sauce:

- 400 g Greek yogurt
- 2 tbsp honey
- Juice of 1 lemon
- 1 tsp vanilla sugar

Instructions:

1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. In a bowl, cream together the butter and sugar until the mixture is light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the lemon juice and zest.
5. Combine the flour and baking powder, then add to the batter alternately with the milk. Mix until smooth.
6. Pour the batter into the prepared pan and sprinkle the chopped pistachios on top.
7. Bake in the oven for about 45-50 minutes, or until the cake is golden brown and cooked through in the center.
8. Allow the cake to cool before serving.

Yogurt Sauce Preparation:

1. In a bowl, mix the Greek yogurt, honey, lemon juice, and vanilla sugar until smooth.
2. Serve the yogurt sauce alongside the cake.
