Sillikakku - A Festive and Delicious Herring Cake

Ingredients
- Base:- 300 g potato bread
- 125 g butter
- Filling:
- 1 pack (150 g) Ahti matjes herring fillets or Ahti traditional herring fillets
- 2 tubs (400 g) sour cream
- 1 tub (200 g) crème fraîche
- 1/2 dl chopped dill
- Freshly ground black pepper
- (salt)
- 4 gelatin sheets
- 2 tbsp water
- Topping:
- 4-5 hard-boiled eggs
- 1 small red onion
- Chives for garnish
Instructions
1. Make the base: Grind the potato bread slices in a food processor until fine. Melt the butter and mix it into the bread crumbs. Line the bottom of a springform pan (22 cm) with parchment paper and press the bread mixture into the bottom.2. Prepare the filling: Soak the gelatin sheets in plenty of cold water for about 10 minutes. Cut the herring fillets into small cubes (use matjes for a spicier flavor or traditional herring for a milder taste). Combine the herring cubes with sour cream, crème fraîche, and chopped dill. Season the mixture with black pepper and check for salt.
3. Prepare the gelatin: Heat two tablespoons of water until boiling and dissolve the gelatin sheets in the water one by one. Pour the gelatin mixture into the filling while stirring continuously.
4. Assemble the cake: Pour the filling over the base in the pan. Allow the cake to chill in the refrigerator for a few hours or overnight.
5. Garnish and serve: Remove the herring cake from the pan and transfer it to a serving platter. Decorate with hard-boiled eggs, red onion, and chives.
