A delicious rye bread perfect for breakfast or a snack. This recipe requires some time, but the result is worth the effort! Preparation Time: 10 hours (includes rising time)
Serving Size: 1 large loaf or 2 small loaves
Ingredients:
- Sourdough Starter: - 2 cups water
- 1 ½ cups barley flakes
- 1 ½ cups barley flour
- ½ cup all-purpose flour
- ½ cup sourdough starter
- Additional Ingredients:
- 15 g fresh yeast
- 2 tablespoons water
- 2 tablespoons honey
- About 4 cups all-purpose flour
- 2 tablespoons oil
- 1 ½ teaspoons sea salt
Instructions:
1. In a bowl, mix the ingredients for the sourdough starter and set aside a small portion for future baking. 2. Cover the bowl with plastic wrap and let the starter ferment for about 8 hours.
3. Dissolve the yeast in lukewarm water and pour it into the sourdough mixture.
4. Add the remaining ingredients and mix the dough well.
5. Let the dough rise for about two hours.
6. Shape the dough into one large loaf or two smaller loaves.
7. Bake the bread at 225°C (437°F) for about 40 minutes, being careful not to cover the loaves immediately if you want a crispy crust.
