Smoky Pineapple Salsa

A delicious and refreshing salsa with a smoky twist, perfect for chips or as a topping for grilled meats. Preparation Time: 15 minutes
Serving Size: 2-4 servings
Ingredients:
- 1 cup fresh pineapple, finely chopped - 1 cup crushed tomatoes
- 1 tablespoon brown sugar
- 2 tablespoons ketchup
- 1/4 teaspoon smoked chili powder
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon apple cider vinegar
- 1/2 clove garlic, minced
- 1/4 teaspoon salt
Instructions:
1. Cut a 1/2 inch slice from the center of the fresh pineapple, remove the hard core and skin, then finely chop the flesh. Place the chopped pineapple in a bowl. 2. Add all the remaining ingredients to the bowl and mix until well combined.
3. Blend the mixture in a blender or food processor until desired consistency is reached.
4. Simmer the salsa in a saucepan over low heat until it thickens slightly, then allow to cool.
5. Enjoy with tortilla chips or as a topping for your favorite dishes!
