Chocolate Muffins

Delicious chocolate muffins that are perfect for a weekend treat. Easy to make and sure to please everyone. Preparation Time: 45 minutes
Serving Size: 22 muffins
Ingredients:
- 200 g butter
- 200 g sugar
- 4 eggs
- 200 g all-purpose flour
- 50 g cocoa powder
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 100 ml milk
- 200 g dark chocolate (melted)
Frosting:
- 2 cartons of cream
- 200 g Philadelphia cream cheese
- 2 tbsp sugar
Instructions:
1. Preheat the oven to 175°C (fan oven 160°C).
2. In a bowl, cream together the butter and sugar.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, mix the dry ingredients (flour, cocoa powder, baking powder, vanilla sugar) and add to the batter alternately with the milk.
5. Stir in the melted chocolate until smooth.
6. Divide the batter into muffin cups and bake in the middle of the oven for about 20-25 minutes, or until a toothpick comes out clean.
7. Allow the muffins to cool.
8. Whip the cream until stiff and then mix in the Philadelphia cream cheese and sugar until well combined.
9. Frost the cooled muffins and serve.
