Ingredients:

- 200 g Brussels sprouts
- 6 eggs
- 100 ml milk
- 100 g cheese (e.g., feta or mozzarella)
- 1 onion
- 2 garlic cloves
- Salt and pepper to taste
- 1 tbsp olive oil

Instructions:

1. Preheat the oven to 200°C (392°F).
2. Wash and clean the Brussels sprouts, then cut them in half.
3. Peel and chop the onion and garlic.
4. Heat the olive oil in a frying pan and add the onion and garlic. Sauté until soft.
5. Add the Brussels sprouts to the pan and cook for a few minutes until they start to brown.
6. In a bowl, crack the eggs and add the milk, salt, and pepper. Whisk the mixture well.
7. Combine the sautéed Brussels sprouts with the cheese and pour the mixture into an ovenproof dish.
8. Pour the egg mixture over the vegetables.
9. Bake in the oven for about 20-25 minutes, until the frittata is set and the top is golden brown.
10. Allow to cool slightly before serving.
