Delicious almond-flavored pastries, perfect for special occasions.
Preparation Time: 1 hour
Serving Size: approximately 12 torttus
Ingredients:
- 200 g margarine
- 2 dl sugar
- 2 eggs
- 3-4 dl powdered sugar (for topping)
- 1 dl almond flakes
- 2 dl all-purpose flour
- 2 dl breadcrumbs
- 2 tsp baking powder
- 2 drops bitter almond extract
- 2 tbsp water
- 1 tbsp lemon juice
- Raspberry jam (for topping)
Instructions:
1. Cream the margarine and sugar until fluffy.
2. Add the eggs one at a time, mixing well after each addition.
3. Flavor the mixture with bitter almond extract.
4. In a separate bowl, combine the flour, breadcrumbs, and baking powder.
5. Gradually add the dry ingredients to the mixture, alternating with water and lemon juice. Mix until smooth.
6. Gently fold in the almond flakes.
7. Divide the batter into muffin cups and bake at 175°C (350°F) for about 20-25 minutes.
8. Allow the torttus to cool and top with raspberry jam and powdered sugar.
