- 2 cups cranberries
- 1 cup sugar (for compote)
- 1 cup water (for compote)
- 1 cup rosemary syrup (recipe below)
- 1 bottle dry sparkling wine (e.g., Cava)
- Fresh rosemary sprigs (for garnish)
- Sugar (for sugaring rosemary)

Instructions:

1. Make the cranberry compote: In a saucepan, bring cranberries, sugar, and water to a boil. Let it simmer for about 10 minutes until the cranberries soften and the mixture thickens. Cool down.
2. Prepare the rosemary syrup: In a saucepan, boil 1 cup of water and 1 cup of sugar. Add fresh rosemary sprigs and let it simmer on low heat for 5-10 minutes. Cool down and strain out the rosemary.
3. Assemble the drink: Spoon cranberry compote into the bottom of champagne flutes. Gently pour sparkling wine into the glasses, allowing the compote to remain at the bottom.
4. Add rosemary syrup: Drizzle a hint of rosemary syrup over each glass.
