Pullakranssi with Rum-Raisins
Pullakranssi with Rum-Raisins
recipe
Description: A delightful Finnish sweet bread with a twist of rum-soaked raisins, perfect for a cozy gathering. Preparation Time: 2 hours
Serving Size: 8-10 servings
Ingredients:
- 500 g all-purpose flour
- 100 g sugar
- 25 g fresh yeast
- 2 dl milk (warm)
- 100 g butter (melted and slightly cooled)
- 1 tsp salt
- 2 eggs
- 1 dl raisins
- 3 tbsp rum
- 1 tsp cardamom (optional)
- 1 egg (for brushing)
Instructions:
1. Dissolve the yeast in warm milk and add sugar. Let the mixture rest for about 10 minutes.
2. In a bowl, mix together the flour, salt, and cardamom. Make a well in the center of the flour mixture.
3. Pour the yeast mixture and melted butter into the well. Add the eggs and knead the dough for about 10 minutes until elastic.
4. Cover the dough with a cloth and let it rise in a warm place for about 1 hour or until doubled in size.
5. Soak the raisins in rum for about 30 minutes.
6. Once the dough has risen, roll it out into a rectangle and sprinkle the rum-soaked raisins on top. Roll the dough into a log and cut it into slices about 2 cm thick.
7. Place the slices around the edge of a round baking pan, leaving space between them. Let them rise again for about 30 minutes.
8. Brush the pullakranssi with beaten egg and bake at 180°C (350°F) for about 25-30 minutes, or until beautifully golden brown.
9. Allow to cool before serving.
