Serving Size: 4-6 servings
Ingredients:
- 1 kg beef stomach (pancia di vitella)
- 4 hard-boiled eggs
- 150 g peas
- 100 g fresh herbs (such as parsley, basil)
- 200 g beef brains (optional)
- 200 g offal (such as liver, heart)
- 100 g Parmesan cheese
- 100 g bread crumbs
- Salt and pepper to taste
- Olive oil for frying
Instructions:
1. Preparation: Boil the eggs until hard and let them cool. Chop the herbs, offal, and brains into small pieces.
2. Filling: In a bowl, mix the hard-boiled eggs, peas, herbs, offal, brains, Parmesan cheese, bread crumbs, salt, and pepper.
3. Stuff and Seal: Carefully open the beef stomach, fill it with the prepared mixture, and seal it tightly.
4. Cooking: Heat olive oil in a large frying pan and brown the stuffed stomach on both sides. Add water and cover with a lid. Cook on low heat for about 1.5 hours.
5. Serving: Let cool before slicing and serve with vegetables or potatoes.
