This delightful recipe features grilled octopus complemented by saffron-fennel chutney, savory Baba Ganoush, spiced lamb fillets, and feta wrapped in filo pastry. A perfect dish for a festive dinner!

Ingredients:

- Grilled Octopus:
- 500 g fresh octopus
- 2 tbsp olive oil
- Salt and pepper to taste
- Lemon juice
- Saffron-Fennel Chutney:
- 1 fennel bulb
- 1 onion
- 1/2 tsp saffron
- 2 tbsp honey
- 1/2 dl white wine
- Salt and pepper to taste
- Baba Ganoush:
- 1 large eggplant
- 2 tbsp tahini
- 2 tbsp olive oil
- 1 garlic clove
- Lemon juice
- Salt to taste
- Lamb Fillets:
- 400 g lamb fillets
- 1 tbsp sumac
- Salt and pepper to taste
- Feta Wrapped in Filo Pastry:
- 200 g feta cheese
- 4 sheets of filo pastry
- 2 tbsp melted butter

Instructions:

1. Prepare the Octopus: Rinse the octopus and dry it. Marinate in olive oil, salt, pepper, and lemon juice for about 20 minutes. Grill the octopus on a hot grill for 3-4 minutes on each side.
2. Make the Saffron-Fennel Chutney: Sauté chopped onion and sliced fennel in olive oil. Add saffron, honey, and white wine. Cook on low heat for about 15 minutes until the fennel is tender. Season with salt and pepper.
3. Prepare the Baba Ganoush: Grill the eggplant until soft. Let it cool, peel, and mash. Add tahini, olive oil, crushed garlic, lemon juice, and salt. Blend until smooth.
4. Cook the Lamb Fillets: Season lamb fillets with sumac, salt, and pepper. Sear in a pan until cooked to your liking (about 3-4 minutes on each side).
5. Make Feta Wrapped in Filo Pastry: Cut feta into small pieces and wrap them in filo pastry sheets. Brush the sheets with melted butter. Bake at 200°C (392°F) for about 15 minutes until golden brown.
6. Serve: Arrange grilled octopus, saffron-fennel chutney, Baba Ganoush, lamb fillets, and filo-wrapped feta on a plate. Enjoy!
