A delicious and smoky dip made from roasted eggplant, perfect for spreading or dipping. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 1 large eggplant- 2 garlic cloves
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Preheat the oven to 200°C (400°F).2. Wash the eggplant and make a few slits in it lengthwise.
3. Place the eggplant on a baking sheet and roast for 30-40 minutes until soft and charred.
4. Remove the eggplant from the oven and let it cool slightly.
5. Peel the eggplant and place the flesh in a blender.
6. Add garlic, tahini, lemon juice, olive oil, salt, and black pepper.
7. Blend until smooth.
8. Serve the baba ganoush garnished with fresh parsley and enjoy with bread or vegetables.
