Deliciously crispy and flavorful eggplant slices, perfect as a side dish or a snack.
Preparation Time: 1 hour 30 minutes
Serving Size: 4-6 servings

Ingredients:

- 1 eggplant
- Salt
- 4-5 tablespoons high-heat oil for frying
- 2 tablespoons all-purpose flour
- 2 tablespoons cornstarch (or just cornstarch)

Instructions:

1. Cut off the tops of the eggplant and slice it lengthwise.
2. Place the eggplant slices on a rack and sprinkle generously with salt. Let them drain for at least 45 minutes.
3. Rinse the eggplant slices with water and allow them to dry on the rack for about half an hour. You can also pat them dry with paper towels.
4. In a bowl, mix the all-purpose flour and cornstarch together.
5. Dredge the eggplant slices in the flour mixture and shake off any excess flour.
6. Heat the oil in a frying pan or heavy-bottomed pot.
7. Fry the eggplant slices in the hot oil a few at a time for 2-3 minutes on each side, until they are golden brown.
8. Remove the fried slices and place them on paper towels to drain excess oil.
Enjoy the crunchy eggplant slices on their own, as a side dish, or on top of bread!
