This delicious rhubarb pie is made using a traditional recipe that brings back memories of Grandma's kitchen. A perfect summer treat!

Ingredients:

- 200 g butter
- 2 dl sugar
- 3 dl all-purpose flour
- 1 dl potato flour
- 2 tsp baking powder
- 1 dl milk
- 2 eggs
- 400 g rhubarb (diced)
- 1 tsp cinnamon (optional)
- A pinch of salt

Instructions:

1. Preheat the oven to 175°C (350°F).
2. Cream the butter and sugar together in a bowl.
3. Add the eggs one at a time, mixing well after each addition.
4. In another bowl, combine the all-purpose flour, potato flour, baking powder, salt, and cinnamon.
5. Gradually mix the dry ingredients into the butter mixture, alternating with the milk, until smooth.
6. Pour the batter into a greased pie dish.
7. Spread the diced rhubarb evenly over the batter.
8. Bake in the oven for about 30-35 minutes, or until the top is a beautiful golden brown.
9. Allow to cool before serving.
