French Spiced Bread (Pain d’Épice)

Servings: About 10 slices
Ingredients:
- 250 g honey - 200 g all-purpose flour
- 100 g rye flour
- 1 dl milk
- 2 eggs
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp salt
- 50 g nuts (e.g., walnuts or almonds) (optional)
- 50 g dried fruits (e.g., apricots or figs) (optional)
Instructions:
1. Preheat the oven to 180 °C (350 °F).2. Melt the honey in a saucepan over low heat and add the milk. Stir until the mixture is smooth.
3. Crack the eggs into a bowl and lightly whisk. Add the honey-milk mixture to the eggs.
4. In another bowl, combine the all-purpose flour, rye flour, baking powder, cinnamon, nutmeg, ginger, and salt.
5. Mix the dry ingredients with the wet ingredients until a smooth batter forms.
6. Fold in the nuts and dried fruits if using.
7. Pour the batter into a greased loaf pan and bake in the center of the oven for about 45-50 minutes, until the bread is cooked and golden brown.
8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
