A delicious and nutritious kale ramen that brings flavor and color to your plate. It's the perfect dish for chilly autumn days and is easy to customize to your liking. Preparation Time: 30 minutes

Ingredients:
- 200 g ramen noodles
- 1 liter vegetable broth
- 200 g kale, chopped
- 2 carrots, thinly sliced
- 1 red onion, sliced
- 2 cloves garlic, crushed
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp fresh ginger, grated
- 2 boiled eggs (optional)
- 1 tbsp sesame seeds
- Fresh cilantro for garnish (optional)
Instructions:
1. Cook the ramen noodles according to the package instructions. Drain and set aside.
2. Heat sesame oil in a large pot over medium heat. Add the sliced red onion and crushed garlic, and sauté for about 2-3 minutes.
3. Add the carrot slices and grated ginger, and continue to sauté for a few more minutes.
4. Pour the vegetable broth into the pot and add the kale. Bring to a boil and let simmer for about 5-7 minutes, until the kale softens.
5. Stir in the soy sauce and cooked noodles. Mix well and heat for a moment longer.
6. Serve the ramen in bowls and optionally top with boiled eggs, sesame seeds, and fresh cilantro.
