A delightful and colorful cake perfect for birthday celebrations. Filled with mango mousse and decorated with vibrant fondant. Preparation Time: 2 hours
Serving Size: 12 slices
Ingredients:
- 4 eggs
- 200 g sugar
- 200 g all-purpose flour
- 1 tsp baking powder
- 100 g butter (melted)
- 100 ml milk
- Food coloring (red, orange, yellow, green, blue, purple)
- 400 g fondant
- 250 g mango puree
- 200 ml heavy cream
- 2 tbsp sugar (for mousse)
- Sprinkles for decoration (optional)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Whisk the eggs and sugar until light and fluffy. Add the melted butter and milk, mixing well.
3. Combine the flour and baking powder, then add to the mixture and stir until smooth.
4. Divide the batter into six bowls. Color each portion with a different food coloring (red, orange, yellow, green, blue, purple).
5. Pour the batter into the pan in layers, starting with one color at a time. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool.
6. To prepare the mango mousse, whip the heavy cream and gently fold in the mango puree and sugar.
7. Slice the cooled cake into three layers and fill each layer with mango mousse.
8. Cover the cake with fondant, shaping and decorating as desired. Add sprinkles if using.
9. Allow the cake to set in the refrigerator before serving.
