Ingredients
- 4 eggs- 1 cup sugar
- 1 cup gluten-free flour
- 1 tsp baking powder
- 1 cup raspberry jam
- 2 cups whipped cream
- Fondant for decoration
Instructions
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.2. Whisk the eggs and sugar together until fluffy.
3. In a separate bowl, mix the gluten-free flour and baking powder, then gently fold it into the egg mixture.
4. Pour the batter into the prepared cake pan and bake for about 25-30 minutes or until a toothpick comes out clean.
5. Allow the cake to cool before removing it from the pan.
6. Once cooled, cut the cake into two or three layers.
7. Spread raspberry jam and whipped cream between each layer.
8. Decorate the top and sides of the cake with fondant.
9. Let the cake set in the refrigerator before serving.
