Refreshing Cucumber Salad

A light and delicious cucumber salad, perfect for summer days or as a side dish. Preparation Time: 15 minutes
Serving Size: 4
Ingredients:
- 2 cucumbers
- 2 red onions
- 0.25 tsp salt
- 0.25 tsp freshly ground black pepper
- Juice and zest of 1 lime
- 1 tbsp olive oil
- Fresh mint leaves, to taste
Instructions:
1. Peel the cucumbers and cut them in half lengthwise. Remove the seeds with a knife and chop the flesh into bite-sized pieces.
2. Halve the peeled red onions and slice them thinly.
3. In a bowl, combine the cucumber, red onion, salt, black pepper, lime juice and zest, and olive oil.
4. Add fresh mint leaves to taste.
5. Mix all the ingredients well and serve immediately.
