A delicious and hearty dish, perfect for serving with pickled gherkins.

Ingredients:

- 800 g potatoes
- 200 g raclette cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp fresh thyme (or 1 tsp dried)
- Small jar of pickled gherkins for serving

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Peel and slice the potatoes into about 0.5 cm thick slices.
3. Place the potato slices in a bowl and add olive oil, salt, black pepper, and thyme. Mix well.
4. Spread the seasoned potatoes on a baking tray lined with parchment paper.
5. Bake the potatoes in the oven for about 30 minutes, until they are tender and slightly golden.
6. Remove the baking tray from the oven and place slices of raclette cheese on top of the potatoes.
7. Return the tray to the oven and bake for another 10 minutes, until the cheese is melted and beautifully golden brown.
8. Serve the raclette potatoes warm with pickled gherkins on the side.
