Quinoa Salad with Avocado and Black Beans

Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 can (15 oz) black beans, rinsed and drained
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa under cold water to remove any bitterness.
2. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed.
3. In a large bowl, combine the black beans, avocado, cherry tomatoes, red onion, and cilantro.
4. Once the quinoa is cooked, let it cool for a few minutes, then add it to the bowl with the other ingredients.
5. Drizzle the lime juice and olive oil over the salad, and season with salt and pepper to taste.
6. Gently toss everything together until well combined.
7. Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld.
