A delightful and adorable bunny cake perfect for children's parties. This cake features a light sponge base, mango and lemon mousse, and simple decoration with a plush toy-style bunny.Preparation Time: 2 hours

Ingredients:
- Sponge Cake:- 200 g sugar
- 4 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 100 g butter (melted)
- Mango Mousse:
- 400 g mango (fresh or frozen)
- 200 g heavy cream
- 100 g sugar
- 2 gelatin sheets
- Lemon Mousse:
- 200 g lemon yogurt
- 200 g heavy cream
- 50 g sugar
- 2 gelatin sheets
- Decoration:
- White fondant (for bunny shape)
- Food coloring (optional)
- Edible decorations (for details)
Instructions:
1. Prepare the Sponge Cake:- Whip sugar and eggs together until light and fluffy.
- Combine flour and baking powder. Gently fold the dry mix into the egg mixture.
- Add melted butter and mix until smooth.
- Pour the batter into a greased cake pan and bake at 180°C (350°F) for about 25-30 minutes. Allow to cool.
2. Make the Mango Mousse:
- Soak gelatin sheets in cold water for about 5 minutes.
- Blend mango and mix in sugar.
- Heat a small portion of the mango in a saucepan and dissolve the gelatin in it. Combine with the remaining mango puree.
- Whip the cream and gently fold it into the mango mixture.
3. Make the Lemon Mousse:
- Soak gelatin sheets in cold water.
- Heat a small amount of yogurt in a saucepan and dissolve the gelatin in it. Combine with the rest of the yogurt.
- Whip the cream and gently fold it into the lemon mixture.
4. Assemble the Cake:
- Cut the cooled sponge cake into two or three layers.
- Spread mango mousse on the first layer, then add the next layer. Spread lemon mousse on the second layer.
- Continue layering until all mousse is used. Finish with the top sponge layer.
5. Decorate:
- Cover the cake with white fondant.
- Shape the bunny from fondant and decorate the cake with edible details.
