Lingonberry Coconut Pie

A delicious and moist pie made with fresh or frozen lingonberries and coconut, perfect for any occasion. Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serving Size: 8 servings
Ingredients:
- 150 g margarine
- 2 eggs
- 2 dl sugar
- 4 dl all-purpose flour
- ½ dl shredded coconut
- 1 tsp baking powder
- 2 dl lingonberries (fresh or frozen)
Instructions:
1. Melt the margarine and let it cool slightly.
2. In a mixing bowl, whisk together the eggs and sugar until the mixture is pale and fluffy.
3. Add the melted margarine to the egg and sugar mixture, and mix well.
4. In a separate bowl, combine the flour, shredded coconut, and baking powder. Gradually add this dry mixture to the egg mixture, stirring until combined.
5. Gently fold the lingonberries into the batter.
6. Pour the batter into a greased pie dish.
7. Bake in a preheated oven at 175°C (350°F) for about 30-40 minutes, or until the pie is golden brown and cooked through.
8. Allow to cool before serving.
