Ingredients:
- 2 dl cornmeal
- 4 dl water
- 2 medium beetroots
- 1 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 300 g raw sausage (e.g., beef or pork)
- Fresh parsley for garnish
Instructions:
1. Peel and boil the beetroots until tender, about 20 minutes. Drain and puree until smooth.
2. In a pot, bring the water to a boil and gradually add the cornmeal while stirring continuously until the mixture thickens.
3. Stir in the pureed beetroots, olive oil, salt, and black pepper. Mix well and cook for a few more minutes.
4. In a skillet, cook the raw sausages until golden brown and fully cooked.
5. Serve the beetroot polenta on plates and top with the cooked sausages.
6. Garnish with fresh parsley before serving.
