Ingredients:
- 200 g butter - 200 g sugar
- 4 eggs
- 200 g all-purpose flour
- 2 tsp baking powder
- 100 ml milk
Filling:
- 250 g raspberries (fresh or frozen)
- 200 g white chocolate
- 300 ml heavy cream
Frosting and Decoration:
- 500 g fondant
- 200 g marzipan
- Food coloring (optional)
Instructions:
1. Prepare the cake base: Beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition.2. Combine the flour and baking powder, then add to the batter. Pour in the milk and mix until smooth.
3. Pour the batter into a greased and floured cake pan. Bake at 175°C (350°F) for about 30-35 minutes or until the cake is cooked through. Allow to cool.
4. Prepare the filling: Melt the white chocolate and let it cool. Whip the heavy cream until soft peaks form, then fold in the melted white chocolate and raspberries.
5. Cut the cooled cake into two or three layers and fill with the raspberry-white chocolate mousse.
6. Frost the cake with fondant. Use marzipan to create decorations.
7. Decorate the cake as desired with food coloring and other embellishments.
