A delicious Kinuski and apricot jam cake perfect for a celebration, especially for a 3-year-old's birthday. Full of flavor and beautifully decorated to capture the hearts of children.
Preparation Time: 1 hour + 1 hour for decoration
Serving Size: 12-14 servings

Ingredients:

- Cake Base:
- 4 eggs
- 1 dl sugar
- 1 dl all-purpose flour
- 1 dl potato flour
- 1 tsp baking powder
- Fillings:
- Just under 1 jar of apricot jam
- 2½ dl whipped cream
- 1 tsp vanilla sugar
- Caramel:
- 2 dl heavy cream
- 2 dl brown sugar
- Piping Cream:
- 4 dl whipped cream
- 1 tsp vanilla sugar
- Decorations:
- Fondant (for Posti Pate decoration)
- Chocolate (for attaching decoration)
- Yellow candy melts (for "Congratulations" text)
- Crispy circus sprinkles

Instructions:

1. Prepare the Cake Base:
- Preheat the oven to 175°C (350°F).
- Whisk the eggs and sugar until light and fluffy.
- In a separate bowl, mix the dry ingredients together and gently fold into the egg-sugar mixture.
- Pour the batter into a 24 cm (9-inch) round cake pan and bake for about 25-30 minutes. Allow to cool.
2. Make the Caramel:
- In a saucepan, heat the heavy cream and brown sugar. Boil the mixture until it thickens, about 10-15 minutes. Let cool.
3. Assemble the Cake:
- Slice the cooled cake base in half.
- Spread apricot jam on the first layer.
- Whip the cream with vanilla sugar and spread half on top of the jam. Place the second layer of cake on top.
4. Decorate:
- Spread the remaining caramel over the top of the cake.
- Pipe whipped cream around the edges and on top of the cake.
- Create a Posti Pate decoration from fondant and decorate the cake.
- Use yellow candy melts to write "Congratulations."
- Sprinkle circus sprinkles over the cake.
5. Serving:
- Allow the cake to set in the refrigerator before serving. Slice and enjoy!
