A delicious and creamy dish that combines soft risotto with flavorful reindeer meat. Perfect for special occasions or everyday indulgence. Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 300 g reindeer meat (e.g., sautéed reindeer)
- 1.5 dl risotto rice (e.g., Arborio)
- 1 l chicken broth
- 1 onion
- 2 garlic cloves
- 1 dl white wine
- 50 g butter
- 50 g Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Melt the butter in a pot and sauté the onion and garlic until soft.
3. Add the risotto rice and stir, cooking for about 1-2 minutes until the rice is slightly translucent.
4. Pour the white wine into the pot and let it evaporate completely.
5. Gradually add the chicken broth, about 1 dl at a time, stirring constantly. Allow the rice to absorb the liquid before adding more.
6. When the risotto is nearly cooked, add the cubed reindeer meat and continue cooking until the meat is heated through and the risotto is creamy.
7. Grate the Parmesan cheese into the risotto and season with salt and black pepper.
8. Serve immediately, garnished with fresh parsley.
