A delightful and moist carrot muffin cake that can be easily pulled apart for sharing. Perfect for dessert or a sweet snack. Preparation Time: 15 minutes

Serving Size: 8-10 servings
Ingredients:
- 2-3 medium carrots, grated
- 2 dl sugar
- 3 dl all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 dl red palm oil (or any other oil)
- 2 eggs
- 1 dl milk
- 1 dl nuts (e.g. walnuts)
- 1 dl raisins (optional)
Instructions:
1. Preheat the oven to 180°C (350°F).
2. Grate the carrots finely.
3. In a large bowl, mix the dry ingredients: sugar, flour, baking powder, cinnamon, and salt.
4. Add the grated carrots, oil, eggs, and milk to the dry mixture. Stir well to combine.
5. Fold in the nuts and raisins if using.
6. Pour the batter into a greased muffin pan or a lined baking dish.
7. Bake in the preheated oven for about 25-30 minutes or until the cake is golden brown and cooked through.
8. Allow the cake to cool slightly before serving. Tear into pieces for easy sharing.
