Ingredients:
- 1 kg pork ribs - 2 tablespoons salt
- 2 tablespoons black pepper
- 2 tablespoons paprika
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon brown sugar
- 100 ml BBQ sauce (optional)
Instructions:
1. Prepare the ribs: Remove the membrane from the back of the ribs and rinse them under cold water. Pat the ribs dry with paper towels. 2. Make the rub: In a bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and brown sugar. Rub this mixture all over the ribs.
3. Light the smoker: Fill the Weber WSM57 with briquettes or charcoal and light them. Adjust the airflow to achieve a temperature of about 100-130 degrees Celsius (212-266 degrees Fahrenheit).
4. Smoke the ribs: Place the ribs on the grate and close the smoker lid. Smoke the ribs for about 4-5 hours until they are tender and juicy. If desired, brush BBQ sauce on the ribs during the last hour of cooking.
5. Let the ribs rest: Remove the ribs from the smoker and let them rest for about 10-15 minutes before serving.
