Delicious pickled tomatoes that are perfect for salads, dishes, or enjoying on their own. Preparation time: about 1.5 hours, including marinating. Serving size: 1 jar.Ingredients:
- 1 pint cherry tomatoes (three different varieties)
- 2 garlic cloves
- 3 sprigs of thyme
Marinade:
- 1 cup red wine vinegar
- 1.5 cups water
- 0.5 cup lemon-flavored extra virgin olive oil
- 1/3 cup sugar
- 1 teaspoon sea salt
- 0.5 teaspoon chili flakes
Instructions:
1. Poke holes in the tomatoes using a grilling skewer or cocktail stick.
2. Peel and slice the garlic cloves.
3. In a bowl, layer the sliced garlic, tomatoes, and thyme.
4. In a separate bowl, mix the marinade ingredients well until the sugar is dissolved.
5. Pour the marinade over the tomatoes in the jar.
6. Gently shake the jar and place it in the refrigerator to marinate for at least one hour, preferably longer.
