A delightful addition to salads or perfect for snacking, these pickled tomatoes are easy and quick to prepare!
Preparation Time: 1 hour + marinating time
Serving Size: 4-6

Ingredients:

- 1 pint cherry tomatoes (three different varieties)
- 2 cloves garlic
- 3 sprigs thyme
For the Marinade:
- 1 cup red wine vinegar
- 1 ½ cups water
- ½ cup lemon-flavored extra virgin olive oil
- ⅓ cup sugar
- 1 teaspoon sea salt
- ½ teaspoon chili flakes

Instructions:

1. Poke holes in the cherry tomatoes with a skewer or cocktail stick.
2. Peel and slice the garlic cloves.
3. In a bowl, layer the garlic, tomatoes, and thyme.
4. In a separate container, mix the marinade ingredients until the sugar dissolves completely.
5. Pour the marinade over the tomatoes in a jar and gently shake to combine.
6. Place the jar in the refrigerator to marinate for at least one hour, preferably a couple of hours.
