- 2 dl quinoa
- 1 cucumber
- 1 bell pepper (any color)
- 1 dl cherry tomatoes
- 1 avocado
- 1 dl feta cheese (or vegan alternative)
- 1/2 dl fresh herbs (e.g., basil or parsley)
- 3 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Cook quinoa according to package instructions and let it cool.
2. Chop the cucumber, bell pepper, cherry tomatoes, and avocado into bite-sized pieces.
3. In a large bowl, combine the cooled quinoa, chopped vegetables, and feta cheese.
4. Finely chop the fresh herbs and add them to the mixture.
5. For the dressing, mix olive oil, lemon juice, salt, and pepper together.
6. Pour the dressing over the salad and toss well to combine.
7. Serve immediately or let it sit in the refrigerator for a while to enhance the flavors.
