Piña Colada Mousse

A delicious Piña Colada mousse that combines tropical flavors, perfect for summer celebrations. Preparation Time: 1 day + 15 minutes
Serving Size: 4-6 servings
Ingredients:
- 2 dl heavy cream
- 2 dl pineapple juice
- 200 g cream cheese
- 1 dl sugar
- 2 tbsp shredded coconut
- 1 tsp vanilla sugar
- 2 gelatin sheets
- 3 tbsp water
- For garnish: pineapple chunks and shredded coconut
Instructions:
1. Soak the gelatin sheets in cold water for about 10 minutes.
2. Heat the pineapple juice in a saucepan and add the soaked gelatin sheets. Stir until the gelatin is completely dissolved.
3. Whip the heavy cream until soft peaks form.
4. In a separate bowl, combine the cream cheese, sugar, shredded coconut, and vanilla sugar.
5. Add the pineapple juice and gelatin mixture to the cream cheese mixture and mix well.
6. Gently fold the whipped cream into the mixture.
7. Pour the mousse into serving bowls and refrigerate for at least 4 hours, preferably overnight.
8. Before serving, garnish the mousse with pineapple chunks and shredded coconut.
