Ingredients:
- 2 cups fresh pineapple, chopped - 1 cup coconut milk
- 1 cup cream
- 1/2 cup dark sugar
- 1/2 cup white rum
- 1/4 cup fresh mint, chopped
Instructions:
1. Blend the fresh pineapple, coconut milk, cream, dark sugar, and rum in a blender until smooth.2. Gently fold in the chopped mint.
3. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
4. If you don’t have an ice cream maker, pour the mixture into a freezer-safe container and freeze. Stir every 30-60 minutes until frozen.
5. Allow the ice cream to freeze for at least 4 hours before serving.
