A festive cocktail that combines the sweetness of persimmon, the warmth of bourbon, and citrusy notes. Perfect for holiday gatherings.

Ingredients:

- ½ dl bourbon
- 1 tbsp lemon juice
- 1 clementine juice
- 1 dash of Angostura bitters (optional)
- 2 tbsp persimmon puree
- Star anise for garnish
Persimmon Puree:
- 2 ripe persimmons
- ½ dl honey (or vegan alternative like agave or maple syrup)
- 1 cinnamon stick
- ½ dl water

Instructions:

1. Start by making the persimmon puree: Peel and chop the persimmons. In a saucepan, combine all puree ingredients and simmer for about 10 minutes. Remove the cinnamon stick, blend the mixture until smooth, and let it cool. Store in the refrigerator and use within a week.
2. In a cocktail shaker, combine the bourbon, lemon juice, clementine juice, Angostura bitters, and persimmon puree. Shake well.
3. Pour the mixture into two chilled glasses.
4. Garnish with star anise and serve immediately.
