Ingredients:
- 400 g chicken breasts- 2 tbsp olive oil
- 1 onion
- 3 garlic cloves
- 1 bell pepper
- 200 g cherry tomatoes
- 200 g cream
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried basil
- 100 g grated cheese
- Fresh basil for garnish
Instructions:
1. Heat olive oil in a pan over medium heat.2. Add diced chicken breasts and cook for about 5-7 minutes until cooked through.
3. Peel and finely chop the onion and garlic cloves. Add to the pan and sauté until the onion is soft.
4. Dice the bell pepper and add it to the pan. Sauté for a few more minutes.
5. Add cherry tomatoes, cream, salt, pepper, and basil. Mix well and let simmer on low heat for about 10 minutes.
6. Transfer the mixture to a baking dish and sprinkle grated cheese on top.
7. Bake in a preheated oven at 200°C (392°F) for about 15 minutes until the cheese is golden brown.
8. Garnish with fresh basil before serving.
