Ingredients:

- 1 liter homemade chicken broth
- 2-3 porcini mushrooms
- 1 fresh garlic clove
- 2 large yellow onions
- 1 mild chili pepper
- 200 g Arborio rice
- 2 tablespoons olive oil
- 50 g Parmesan cheese (grated)
- Salt and black pepper to taste
- Fresh parsley for garnish

Instructions:

1. Heat the chicken broth in a pot and keep it warm over low heat.
2. Chop the yellow onions, garlic, and chili pepper into small pieces.
3. Heat olive oil in a large skillet over medium heat. Add the chopped onions, garlic, and chili, and sauté for about 5 minutes until softened.
4. Slice the porcini mushrooms and add them to the skillet. Cook for a few minutes until the mushrooms are tender.
5. Add the Arborio rice to the skillet and stir well to coat the rice with the oil. Sauté the rice for about 2-3 minutes.
6. Pour in about 1 cup of hot chicken broth into the rice and stir until the liquid is absorbed. Repeat this process until the rice is al dente and the texture is creamy (about 18-20 minutes).
7. Once the risotto is ready, remove it from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste.
8. Serve immediately and garnish with fresh parsley.
