A delicious salmon stew that combines seafood and vegetables, creating a flavorful and hearty meal. Preparation Time: 45 minutes

Ingredients:
- 2 leeks (sliced) - 2 garlic cloves (minced)
- 3 tablespoons olive oil
- 1 teaspoon saffron
- 2 carrots (diced)
- 400 g canned crushed tomatoes
- 150 ml white wine
- 500 ml fish stock
- 1/2 teaspoon cayenne pepper
- 500 g salmon fillet (diced)
- 200 g mussels (cleaned)
- 200 g shrimp (peeled)
Instructions:
1. Heat olive oil in a large pot over medium heat. Add sliced leeks and minced garlic. Sauté until softened. 2. Add diced carrots and continue cooking for a few minutes.
3. Stir in saffron, crushed tomatoes, white wine, and fish stock. Mix well and let it simmer for about 10 minutes.
4. Add cayenne pepper and stir. Then add the salmon, mussels, and shrimp. Cook on low heat until the fish and seafood are cooked through, about 10-15 minutes.
5. Check the seasoning and add salt and pepper if needed.
6. Serve the stew warm with fresh bread.
