Ingredients:
- 200 g digestive biscuits - 100 g butter (melted)
- 250 g passion fruit puree
- 150 g sugar
- 3 eggs
- 1 tbsp cornstarch
- Juice of 1 lime
- 2 egg whites
- 100 g sugar (for meringue)
- A pinch of salt
Instructions:
1. Preheat the oven to 180°C (350°F). 2. Crush the digestive biscuits and mix them with the melted butter. Press the mixture into the bottom and sides of a pie dish. Bake in the oven for 10 minutes and let cool.
3. In a bowl, combine the passion fruit puree, sugar, eggs, cornstarch, and lime juice. Pour the mixture over the cooled biscuit base.
4. Bake the pie in the oven for 25-30 minutes, until the filling is set. Remove from the oven and let it cool.
5. Whip the egg whites with a pinch of salt until soft peaks form. Gradually add the sugar while continuing to whip until the mixture is glossy and stiff.
6. Spread the meringue over the pie and bake for an additional 10 minutes, until the meringue is golden brown.
7. Allow the pie to cool before serving.
