Ingredients:
- 800 g canned tomatoes
- 4 slices of stale bread (e.g., ciabatta)
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- ½ dl olive oil
- 1 tsp sugar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until soft.
3. Add the canned tomatoes, vegetable broth, and sugar. Bring to a boil and then reduce the heat. Let the soup simmer on low for about 15 minutes.
4. Add the slices of bread to the soup and stir well. Cook for an additional 5-10 minutes until the bread is soft and the soup has a smooth consistency.
5. Season with salt and pepper. If desired, you can blend the soup with an immersion blender for a smoother texture.
6. Garnish each serving with fresh basil before serving.
