A traditional Spanish dessert that is rich and delicious. This homemade version is not only tastier but also unique.

Serving Size: 4-6 servings
Ingredients:
- 400 ml cream
- 200 ml milk
- 200 g sugar
- 1/2 dl water
- 3 eggs
- Zest of 1 lemon
- 50 ml white wine
- Oil for greasing the ramekins
Instructions:
1. In a saucepan, bring the cream and milk to a boil.
2. In a frying pan, melt the sugar until it turns golden brown, stirring constantly.
3. Remove the pan from heat and gradually add the hot cream-milk mixture to the melted sugar, stirring until the sugar dissolves.
4. Allow the mixture to cool.
5. Pour the sugar syrup into the mixture and add boiling water, stirring to create a smooth solution.
6. Add the lemon zest and white wine to the cooled mixture.
7. Lightly beat the eggs and mix them into the milk-sugar mixture.
8. Grease the oven-safe ramekins with oil and pour the sugar mixture into the bottom.
9. Pour the milk mixture over the sugar syrup.
10. Bake in a water bath in a hot oven for 10-20 minutes, until the mixture is set.
11. Test for doneness with a toothpick.
12. Invert the flan onto dessert plates before serving and garnish with herbs if desired.
