Ingredients:
- 400 g potatoes
- 1 onion
- 2 garlic cloves
- 2 carrots
- 1 red bell pepper
- 200 g mushrooms
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 100 ml vegetable broth
- 2 tbsp olive oil
- Parsley for garnish
Instructions:
1. Peel and chop the potatoes, onion, garlic, carrots, and red bell pepper.
2. Heat olive oil in a large pan over medium heat. Add the onion and garlic, sauté until softened.
3. Add the carrots and red bell pepper to the pan, and cook for about 5 minutes.
4. Stir in the mushrooms, potatoes, thyme, salt, and black pepper. Mix well.
5. Pour the vegetable broth into the pan and bring to a boil. Reduce the heat and simmer covered for about 15-20 minutes, until the potatoes are tender.
6. Serve each portion garnished with parsley.
