Hirven Osso Bucco

A hearty dish of tender venison shanks braised with vegetables and herbs. Preparation time: 15 minutes
Cooking time: 3 hours
Serving size: 4 servings
Ingredients:
- 4 pieces of venison shanks
- Salt
- Black pepper
- Flour
- Butter (for frying)
- 2-3 celery stalks
- 2 carrots
- 1 onion
- 3-4 cloves of garlic
- 1 can of good quality crushed tomatoes
- 2 dl beef broth
- 2 dl red wine
- A pinch of brown raw cane sugar
- Thyme
- Basil
- Zest of 1 lemon or orange
- 2 bay leaves
Instructions:
1. Make a few cuts in the sinew around the edges of the shanks to prevent them from curling during cooking.
2. Season the shanks with salt and black pepper, then coat them in flour.
3. In a pan, heat butter and brown the shanks on both sides.
4. Transfer the browned shanks to a baking dish.
5. Chop the celery, peel and dice the carrots, onion, and garlic.
6. Sauté the chopped vegetables in the same pan until browned, then pour them over the shanks.
7. In the pan, bring the crushed tomatoes, beef broth, and red wine to a boil.
8. Add the sugar, thyme, basil, and the zest of lemon or orange.
9. Pour the sauce over the shanks and add the bay leaves.
10. Cover the dish with foil and let it braise in the oven at 170°C (340°F) for about 3 hours, until the meat is tender.
