A delicious osso buco stew that brings spring flavors into the heart of winter. Combining flavorful beef with fresh vegetables creates a rich and nourishing meal. Preparation Time: 2 hours
Serving Size: 4-6 servings
Ingredients:
- 1.5 kg beef osso buco
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 bell pepper, diced
- 400 g crushed tomatoes
- 200 ml red wine
- 200 ml beef broth
- 1 bay leaf
- 1 tbsp fresh rosemary, chopped
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Sear the osso buco pieces on both sides until browned. Remove the meat and set aside.
2. In the same pot, add the onion, garlic, carrots, celery, and bell pepper. Sauté the vegetables for about 5-7 minutes until they soften.
3. Return the browned meat to the pot. Add the crushed tomatoes, red wine, and beef broth. Stir in the bay leaf and rosemary.
4. Season with salt and black pepper. Bring the mixture to a boil, then reduce the heat. Cover the pot and simmer on low heat for about 1.5 hours, until the meat is tender.
5. Serve the stew garnished with fresh parsley.
