A delicious and quick weeknight meal that combines bold spices and fresh ingredients. Prep time: 30 minutes. Serves: 4.Ingredients:
- ½ kg ground beef
- 1 egg
- 4 shallots
- 1 garlic clove
- Zest of 1 lemon
- 5 tbsp breadcrumbs
- Fresh coriander
- 1 tbsp coriander seeds
- 1 tbsp cumin
- 1 tsp cloves
- 1 tsp cardamom
- 1 tbsp Dijon mustard
- Red onion
- Cucumber
- Cherry tomatoes
- Arugula
- Turkish yogurt
- Olive oil
- Salt
- Pepper
- White wine vinegar
- Sugar
Instructions:
1. Toast coriander seeds, cumin, cloves, and cardamom in a dry pan until fragrant. Grind the spices into a fine powder using a mortar and pestle.
2. Sauté shallots and garlic in olive oil over low heat. Remove from heat and stir in chopped fresh coriander.
3. In a bowl, combine ground beef, lemon zest, egg, breadcrumbs, Dijon mustard, toasted spices, sautéed shallots, salt, and pepper.
4. Shape the mixture into patties and bake in a preheated oven at 200°C (400°F) for about 5 minutes until cooked through.
5. Prepare pita bread and fry them in olive oil until golden brown.
6. Assemble the kofta on the pita, adding Turkish yogurt, arugula, sliced cucumber, halved cherry tomatoes, and pickled red onion. Drizzle with olive oil.
