Serving Size: 4 servings
Ingredients:
- 400 g chicken breast fillets - 1 onion
- 2 garlic cloves
- 1 bell pepper
- 200 g cherry tomatoes
- 200 g pasta (such as fusilli)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried basil
- 1/2 cup grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions and drain. 2. Peel and chop the onion and garlic cloves.
3. Heat olive oil in a skillet over medium heat, then add the onion and garlic. Sauté until the onion is soft.
4. Add the diced chicken breast to the skillet and cook until golden brown and cooked through.
5. Add the chopped bell pepper and cherry tomatoes to the skillet. Cook until the bell peppers are slightly softened.
6. Stir in the cooked pasta, salt, black pepper, and basil. Mix well and heat for a moment longer.
7. Serve the portions with grated Parmesan cheese, if desired.
