A delicious Olaf cake that combines light sponge cake, chocolate mousse, and mango mousse. Perfect for Frozen-themed parties, it will surely delight both children and adults. Preparation Time: 2 hours (plus chilling)
Serving Size: 10-12 servings
Ingredients:
- Sponge Cake: - 4 eggs
- 1 dl sugar
- 1 dl all-purpose flour
- 1 tsp baking powder
- 0.5 dl milk
- 0.5 dl butter
- Chocolate Mousse:
- 200 g dark chocolate
- 3 dl heavy cream
- 2 tbsp sugar
- 1 tsp vanilla sugar
- Mango Mousse:
- 300 g mango puree
- 2 dl heavy cream
- 2 tbsp sugar
- 2 gelatin leaves
- 1 tbsp water
Instructions:
1. Prepare the Sponge Cake: - Preheat the oven to 175°C (350°F).
- Whisk the eggs and sugar until fluffy.
- Combine flour and baking powder, then add to the egg-sugar mixture.
- Stir in milk and melted butter until smooth.
- Pour the batter into a greased and floured baking pan.
- Bake for about 25-30 minutes. Let cool.
2. Prepare the Chocolate Mousse:
- Melt the dark chocolate in a water bath.
- Whip the heavy cream, sugar, and vanilla sugar until soft peaks form.
- Gently fold the melted chocolate into the whipped cream.
3. Prepare the Mango Mousse:
- Soak the gelatin leaves in cold water for 10 minutes.
- Heat the water in a saucepan and dissolve the gelatin leaves in it.
- Mix the mango puree and sugar, then add the melted gelatin.
- Whip the heavy cream and fold it into the mango mixture.
4. Assemble the Cake:
- Cut the cooled sponge cake into two layers.
- Place the first layer on a serving plate, add the chocolate mousse, and cover with the second layer.
- Pour the mango mousse over the top and smooth the surface.
- Chill the cake in the refrigerator for at least 4 hours or overnight.
5. Decorate:
- Decorate the cake as desired, for example, using whipped cream or other decorations that match the Olaf theme.
