A creamy and nutritious soup made with fresh nettles, perfect for a comforting meal.

Serving Size: 4 servings
Ingredients:
- 1 liter vegetable broth (or meat/chicken broth)
- 125 g fresh nettles
- 2 tbsp butter
- 3 tbsp all-purpose flour
- Sea salt, to taste
- White pepper, to taste
- A pinch of sugar
- A pinch of nutmeg
- 1 egg yolk
- 200 ml cooking cream
- Hard-boiled eggs, for serving
Instructions:
1. Rinse the nettles in a colander and cook them in the vegetable broth for 10 minutes.
2. In a pan, melt the butter and sprinkle the flour over it. Let the flour absorb all the fat.
3. Whisk the cream into the flour mixture until smooth.
4. Combine the cream mixture with the cooked nettles and blend the soup with an immersion blender until smooth.
5. Taste the soup and season with salt, white pepper, sugar, and nutmeg.
6. Serve the soup with hard-boiled eggs on the side.
